Very good recipe. Little bit of work, but worth the effort. Got recipe from a local newspaper in West Texas. There is a "King Ranch" in Texas. I am sure that anyone who tries this recipe will really enjoy it.My family likes only the breast of the chicken. Good deal, less to de-bone. Recipe is very easy to double, or more. I always, at least doubled it.

Ingredients

  • 1 - chicken, boiled and deboned, or 2-3 large breasts
  • 1 - medium onion, chopped
  • 1 - green pepper, chopped
  • 1 - large bag fritoes, wilted in 1 cup hot chicken broth
  • 1 - can cream of mushroom soup
  • 1 can - cream of chicken soup
  • 1 can - rotel tomatoes
  • 12 oz - grated cheddar cheese
  • 1/2 tsp - chili powder
  • 1/2 tsp - each, garlic powder, salt, & pepper

How To Make king ranch chicken

  • Step 1
    After wilting fritoes in large bowl with hot chicken broth, spread in bottom of 8 x 12 inch pan. Spread chicken on top, if using breast, shred, then layer onion, green pepper and half of grated cheese.
  • Step 2
    In saucepan, heat together both soups, tomatoes and seasoning. Pour hot mixture over ingredients in pan and top with rest of cheese.
  • Step 3
    Bake at 350 for 30 minutes, or till heated through and cheese is melted and lightly browned.
