Very good recipe. Little bit of work, but worth the effort. Got recipe from a local newspaper in West Texas. There is a "King Ranch" in Texas. I am sure that anyone who tries this recipe will really enjoy it.My family likes only the breast of the chicken. Good deal, less to de-bone. Recipe is very easy to double, or more. I always, at least doubled it.

Ingredients
- 1 - chicken, boiled and deboned, or 2-3 large breasts
- 1 - medium onion, chopped
- 1 - green pepper, chopped
- 1 - large bag fritoes, wilted in 1 cup hot chicken broth
- 1 - can cream of mushroom soup
- 1 can - cream of chicken soup
- 1 can - rotel tomatoes
- 12 oz - grated cheddar cheese
- 1/2 tsp - chili powder
- 1/2 tsp - each, garlic powder, salt, & pepper
How To Make king ranch chicken

Step 1After wilting fritoes in large bowl with hot chicken broth, spread in bottom of 8 x 12 inch pan. Spread chicken on top, if using breast, shred, then layer onion, green pepper and half of grated cheese.

Step 2In saucepan, heat together both soups, tomatoes and seasoning. Pour hot mixture over ingredients in pan and top with rest of cheese.

Step 3Bake at 350 for 30 minutes, or till heated through and cheese is melted and lightly browned.
