This dish is the only dish I've gotten great reviews on from my family to the people I work with. I find it very easy to make and a recipe that will be in your mind till the end of time.

Ingredients

  • 1/2 large onion/chopped
  • 1 large green bell pepper/chopped
  • 2 tablespoons vegetable oil
  • 2-4 cups cooked chicken breast/chopped
  • 1 can cream of mushroom soup
  • 1 can cream of chicken soup
  • 1 can rotel (diced tomatoes, green chilies)
  • 1 teaspoon chili powder
  • 1/4 teaspoon salt
  • 1/4 teaspoon pepper
  • 1/4 teaspoon garlic powder
  • 12 - corn tortillas (more or less depends on how you tear it apart)
  • 2 cups cheddar cheese, shredded

How To Make king ranch chicken

  • Step 1
    Saute onion and bell pepper in hot oil in a large skillet over medium-high heat 5 min or until tender. Stir in chicken and next 7 ingregiants remove from heat.
  • Step 2
    Tear tortillas into 1 inch pieces; layer one-third of tortilla pieces into bottom of a lightly greased 13x9 inch baking dish. (In this step i usually just fold the tortilla in half and in half again to get four pieces) Top with 1/3 of chicken mixture and 2/3 cups of cheese. Repeat layers twice. ( I usually top half of the chicken mixture then top it w/ the cheese and layer the next set of tortillas then repeat) After your 2nd layer is in place top it with one last layer of tortillas and cheese on top of that.
  • Step 3
    Bake at 350 degrees for 30 to 35 minutes. Let is cool down and it is READY TO SERVE.
