I found this recipe in an old cookbook from the 80's. I like it on a bed of cooked rice, with a salad.. Enjoy!

Ingredients

skinless, boneless, split chicken breasts
1 can(s)
6oz. frozen lime juice (minute maid)
2 Tbsp
honey
1/4 c
unsweeted pineapple juice
1 Tbsp
worcestershire sauce
1 tsp
lemon pepper
2 Tbsp
cornstarch
4
pineapple slices

How to Make Key Lime Chicken

Step-by-Step

  • 1Place chicken in a shallow baking dish or pan which has been sprayed with a no stick spray. Bake at 375* for 20 minutes, then drain off liquid.
  • 2Blend the remaining ingredients (except pineapple slices) in a blender and pour over the chicken. Bake for an additional 25 minutes or until chicken is done.
  • 3In the last 5 minutes of cooking time, add the pineapple slices to the top of the chicken... serve over rice, with a side salad..Enjoy!!
