Ingredients
- 4 boneless chicken thighs cut into strips
- 1 small onion chopped
- 2 cups mushrooms chopped
- 2 tablespoons grated ginger
- 4 cloves garlic minced
- 2 tablespoons oil
- 2 tablespoons soy sauce
- 1 tablespoon fish sauce
- 1 tablespoon rice vinegar
- 2 tablespoons brown sugar
- 2 scallions chopped
How To Make kai phat khing (chicken with ginger)

Step 1In a wok or large skillet place the oil. Add the chicken and saute until opaque. Add the onions, mushrooms, ginger, and garlic. Stir fry until chicken is almost done and the mushrooms are browned

Step 2Stir in the soy sauce, fish sauce, rice vinegar, and brown sugar. Stir fry 3 more minutes. Serve sprinkled with scallions
