Ingredients For jumpin' beef (lomo saltado)

  • 1 Tbsp
    canola oil
  • 2 lb
    beef or chicken strips
  • 2 tsp
  • 1 tsp
  • 1 Tbsp
    soy sauce
  • 2 Tbsp
    red wine vinegar
  • salt, pepper
  • 3
    red onion wedges
  • 1
    red chile strips, seedless
  • 2 c
    tomato wedges, seedless
  • 2 tsp
    parsley flakes
  • fried french fries ( 1 cup per serving)

How To Make jumpin' beef (lomo saltado)

    In large frying pan heat oil, fry beef or chicken, add garlic, cumin, soy sauce,vinegar, salt and pepper.

    Add onion and chile, mix until cooked but still crisp.

    Add tomato wedges, mix and turn off heat. Leave covered for 5 minutes.

    Sprinkle parsley and serve with french fries.
