Ingredients
- 1 tablespoon canola oil
- 2 pounds beef or chicken strips
- 2 teaspoons garlic
- 1 teaspoon cumin
- 1 tablespoon soy sauce
- 2 tablespoons red wine vinegar
- - salt, pepper
- 3 - red onion wedges
- 1 - red chile strips, seedless
- 2 cups tomato wedges, seedless
- 2 teaspoons parsley flakes
- - fried french fries ( 1 cup per serving)
How To Make jumpin' beef (lomo saltado)

Step 1In large frying pan heat oil, fry beef or chicken, add garlic, cumin, soy sauce,vinegar, salt and pepper.

Step 2Add onion and chile, mix until cooked but still crisp.

Step 3Add tomato wedges, mix and turn off heat. Leave covered for 5 minutes.

Step 4Sprinkle parsley and serve with french fries.
