This dish is common across West Africa. It is very spicy!! I found this recipe in an old issue of "Chile Pepper."

Ingredients
- 1 pound cut-up chicken or 1 lb. beef stew meat
- 4 cups water
- 2 cups cooking oil
- 3 - chopped onions
- 16 ounces can of tomato sauce
- 2 tablespoons ground red pepper
- 1 teaspoon salt
- 1/2 teaspoon ground black pepper
- 2 cups brown or white rice
How To Make jolof rice

Step 1Deep fry the chicken or beef until brown.

Step 2When finished, remove the meat or chicken and leave about 1 cup of oil in the pan; fry the chopped onions in it.

Step 3When the onions are browned, add the tomato sauce, cooked chicken or beef and 2 cups of water and simmer.

Step 4Then add the 2 cups of rice and 2 more cups of water, mixing thoroughly.

Step 5Cover and simmer slowely until the rice is done, about 20 to 30 minutes.
