joan's honey orange chicken

This recipe is by the wonderful chef and cookbook author, Joan Nathan. I have nothing but praise for all of her recipes I've tried. This one is one of my husband's favorites and deserving of a special occasion!

Ingredients

  • 2 - eggs
  • 2 teaspoons water
  • 1 cup bread crumbs or matzo meal
  • 1 teaspoon salt
  • 1 1/4 tablespoons pepper
  • 1 1/2 - 3 pound fryers, cut up
  • 1/2 cup vegetable oil for browning chicken
  • 1 cup hot water
  • 1 cup orange juice
  • 1/4 teaspoon ground ginger
  • 1/4 to 1/2 cup honey (i find 1/4 cup to be enough.)

How To Make joan's honey orange chicken

  • Step 1
    Beat eggs with 2 teaspoons water. In a separate bowl, mix the breadcrumbs with the salt and pepper. Dip the chicken, one piece at a time, in to egg mixture, then the breadcrumb mixture. Heat the oil in a heavy skillet and brown the chicken pieces on all sides, then remove to a baking pan.
  • Step 2
    Heat the oven to 325 F. Mix the cup of hot water (I usually boil it first in a tea pot or in the microwave.) with the honey, orange juice and ginger.
  • Step 3
    Pour the sauce over the chicken. Bake uncovered in a parchment lined baking pan for 45 minutes, basting occasionally.
