Joan's Honey Orange Chicken

1 cbread crumbs or matzo meal

1 1/4 Tbsppepper

1 1/23 pound fryers, cut up

1/2 cvegetable oil for browning chicken

1 chot water
-
1 corange juice
-
1/4 tspground ginger

1/4 to 1/2 choney (i find 1/4 cup to be enough.)
How to Make Joan's Honey Orange Chicken
- Beat eggs with 2 teaspoons water. In a separate bowl, mix the breadcrumbs with the salt and pepper. Dip the chicken, one piece at a time, in to egg mixture, then the breadcrumb mixture.
Heat the oil in a heavy skillet and brown the chicken pieces on all sides, then remove to a baking pan. - Heat the oven to 325 F.
Mix the cup of hot water (I usually boil it first in a tea pot or in the microwave.) with the honey, orange juice and ginger. - Pour the sauce over the chicken. Bake uncovered in a parchment lined baking pan for 45 minutes, basting occasionally.
