How to Make Joan's Honey Orange Chicken

Step-by-Step

  1. Beat eggs with 2 teaspoons water. In a separate bowl, mix the breadcrumbs with the salt and pepper. Dip the chicken, one piece at a time, in to egg mixture, then the breadcrumb mixture.
Heat the oil in a heavy skillet and brown the chicken pieces on all sides, then remove to a baking pan.
  2. Heat the oven to 325 F.
Mix the cup of hot water (I usually boil it first in a tea pot or in the microwave.) with the honey, orange juice and ginger.
  3. Pour the sauce over the chicken. Bake uncovered in a parchment lined baking pan for 45 minutes, basting occasionally.
