jerk chicken - cassies way

Love this chicken. The aroma throughout the house is just amazing. Recipe was tweaked from my all Chicken Recipes Cookbook, for inquiring minds. Enjoy! My photos

Ingredients

  • 1 - 3 pound chicken, cut into pieces. i used 4 thighs/ 3 breasts cut up
  • 2 teaspoons salt
  • 2 teaspoons ground allspice
  • 2 teaspoons packed brown sugar
  • 2 teaspoons onion powder
  • 1 teaspoon dried minced garlic - was out so used 3 minced cloves fresh
  • 1 teaspoon ground nutmeg
  • 1 teaspoon black pepper
  • 1 teaspoon dried onion flakes ( optional )
  • 1 teaspoon ground ginger
  • 1/2 teaspoon cayenne - i used more
  • 2 - dried habaneros/ crushed - optional
  • 1/2 teaspoon ground cinnamon
  • 1/2 teaspoon dried thyme
  • 1/2 teaspoon red pepper flakes - i used more
  • 1/4 cup vegetable oil

How To Make jerk chicken - cassies way

  • Step 1
    Make the jerk rub by mixing all the spices.
  • Step 2
    Toss the chicken pieces with the spice mixture, then cover, and marinate in the refrigerator 2 to 4 hours.
  • Step 3
    Preheat oven to 350 degrees F. Pour the vegetable oil into a 9x13 inch baking dish.
  • Step 4
    Place the chicken pieces skin side up into the baking dish.
  • Step 5
    Bake in the preheated oven for 1 hour 20 minutes, until no longer pink near the bone.
  • Step 6
    Turn the oven on to broil, and cook until the skin crisps, 2 to 5 minutes. ( I used skinless breasts, so I took the thighs with skin and placed on top).
  • Step 7
