Ingredients
- 1/2 cup olive oil
- 3 cups chopped onions
- 2 tablespoons minced shallots
- 1 tablespoon minced garlic
- 1 cup chopped green bell pepper
- 3 teaspoons salt, in all
- 1 pound adouille sausage, cut in 1/4 inch slices
- 1 1/2 pounds white and dark chicken meat, cut into 1" cubes
- 1 1/4 teaspoons cayenne pepper
- 3 cups long grain rice
- 6 cups water, or chicken broth (i use broth)
- 3 - bay leaves
How To Make jambalaya

Step 1Heat oil in large heavy pot. Add onions, shallots, garlic, bell pepper, 2 teaspoons salt and 1 teaspoon cayenne pepper. Stir and brown vegetables for 20 minutes.

Step 2Add the sausage and continue browning, cooking about 15 minutes.

Step 3Season chicken with remaing salt and cayenne pepper. Add to the pot with the bay leaves. Add rice and stir for 2-3 minutes.

Step 4Add the water/broth, stir, and cover pot. Cook for 35 minutes (until rice is tender, and all the liquid is absorbed. Remove from heat and let stand 2-3 minutes before serving. Enjoy!
