Ingredients

  • 1/2 cup olive oil
  • 3 cups chopped onions
  • 2 tablespoons minced shallots
  • 1 tablespoon minced garlic
  • 1 cup chopped green bell pepper
  • 3 teaspoons salt, in all
  • 1 pound adouille sausage, cut in 1/4 inch slices
  • 1 1/2 pounds white and dark chicken meat, cut into 1" cubes
  • 1 1/4 teaspoons cayenne pepper
  • 3 cups long grain rice
  • 6 cups water, or chicken broth (i use broth)
  • 3 - bay leaves

How To Make jambalaya

  • Step 1
    Heat oil in large heavy pot. Add onions, shallots, garlic, bell pepper, 2 teaspoons salt and 1 teaspoon cayenne pepper. Stir and brown vegetables for 20 minutes.
  • Step 2
    Add the sausage and continue browning, cooking about 15 minutes.
  • Step 3
    Season chicken with remaing salt and cayenne pepper. Add to the pot with the bay leaves. Add rice and stir for 2-3 minutes.
  • Step 4
    Add the water/broth, stir, and cover pot. Cook for 35 minutes (until rice is tender, and all the liquid is absorbed. Remove from heat and let stand 2-3 minutes before serving. Enjoy!
