Husbands personal favorite meal.

Ingredients

  • 2 tablespoons olive oil
  • 1 large onion, chopped
  • 1 medium green pepper, chopped
  • 3 cloves garlic, minced
  • 2 cans tomatoes, canned 16 oz diced
  • 1 can black beans, drained
  • 1 can pinto beans
  • 1 cup white rice uncooked
  • 3 cups chicken broth
  • 3 - andouille sausage links sliced
  • 3 - chicken breasts, cut up
  • 1 pound shrimp, cooked
  • 2 cans tomato paste, 6oz
  • 1 teaspoon creole seasoning (more or less for taste)

How To Make sarah's jambalaya

  • Step 1
    Heat 1 tbls. oil in stock pot and saute onion, green pepper and garlic until tender.
  • Step 2
    Add canned tomatoes, chicken broth, drained black beans, pinto beans, creole seasoning and tomatoe paste, cover and simmer 20 minutes.
  • Step 3
    While that is simmering, heat up 2 tbls. oil in frying pan and cook cut up chicken until no longer pink and juices run clear.
  • Step 4
    Add cooked chicken, sausage and rice to stock pot and cover. Simmer for 40 minutes or until rice is cooked. Stir occasionally.
  • Step 5
    Add cooked shrimp about 5 minutes before your ready to serve it, or just long enough before so shrimp get hot. **Do not add shrimp too early or they will get tough**
  • Step 6
    You can serve with hot crusty rolls or bread and a side salad.
