1 large
onion, chopped
1 medium
green pepper, chopped
3 clove
garlic, minced
2 can(s)
tomatoes, canned 16 oz diced
1 can(s)
black beans, drained
1 can(s)
pinto beans
1 c
white rice uncooked
3 c
chicken broth
andouille sausage links sliced
chicken breasts, cut up
1 lb
shrimp, cooked
2 can(s)
tomato paste, 6oz
1 tsp
creole seasoning (more or less for taste)

How to Make Sarah's Jambalaya


  • 1Heat 1 tbls. oil in stock pot and saute onion, green pepper and garlic until tender.
  • 2Add canned tomatoes, chicken broth, drained black beans, pinto beans, creole seasoning and tomatoe paste, cover and simmer 20 minutes.
  • 3While that is simmering, heat up 2 tbls. oil in frying pan and cook cut up chicken until no longer pink and juices run clear.
  • 4Add cooked chicken, sausage and rice to stock pot and cover. Simmer for 40 minutes or until rice is cooked. Stir occasionally.
  • 5Add cooked shrimp about 5 minutes before your ready to serve it, or just long enough before so shrimp get hot. **Do not add shrimp too early or they will get tough**
  • 6You can serve with hot crusty rolls or bread and a side salad.
