This is a recipe that I just tried and it was not only simple, but fast, and really tasty.

1 c
italian bread crumbs
1 c
chicken broth
1/4 c
white wine (optional)
1 c
muenster cheese (grated)
1 medium
sweet onion
1 medium
pack of mushrooms
3-4 medium
boneless skinless chicken breast (cubed)

How to Make Italian Chicken Casserole


  • 1Saute' sweet onion and mushrooms. I usually do them separate, then add them together when they are done.
  • 2Prepare extra wide egg noodles, or pasta of choice, drain, and set aside.
  • 3Whisk eggs in bowl. Place cubed chicken in eggs until ready for breading.
  • 4In large frying pan, coat with non-stick spray, butter or EVOO, whatever your personal favorite is. Take cubed chicken out of egg mixture and drop into bread crumbs. Brown on each side, then set aside.
  • 5In 9 X 13 casserole dish, place pasta, mushrooms, onions, chicken, and add chicken broth (and/or wine). Grate Muenster cheese over top. Bake @ 350 for 1/2 hour.

    There are so many variations to this recipe, it is one that would be very easy to have a lot of fun with.
