This is a recipe that I just tried and it was not only simple, but fast, and really tasty.

2 medium
1 c
italian bread crumbs
1 c
chicken broth
1/4 c
white wine (optional)
1 c
muenster cheese (grated)
1 medium
sweet onion
1 medium
pack of mushrooms
3-4 medium
boneless skinless chicken breast (cubed)


1Saute' sweet onion and mushrooms. I usually do them separate, then add them together when they are done.
2Prepare extra wide egg noodles, or pasta of choice, drain, and set aside.
3Whisk eggs in bowl. Place cubed chicken in eggs until ready for breading.
4In large frying pan, coat with non-stick spray, butter or EVOO, whatever your personal favorite is. Take cubed chicken out of egg mixture and drop into bread crumbs. Brown on each side, then set aside.
5In 9 X 13 casserole dish, place pasta, mushrooms, onions, chicken, and add chicken broth (and/or wine). Grate Muenster cheese over top. Bake @ 350 for 1/2 hour.

There are so many variations to this recipe, it is one that would be very easy to have a lot of fun with.
