Italian Chicken Casserole

Ingredients

2 mediumeggs

1 citalian bread crumbs

1 cchicken broth
-
1/4 cwhite wine (optional)

1 cmuenster cheese (grated)

1 mediumsweet onion
-
1 mediumpack of mushrooms
-
3-4 mediumboneless skinless chicken breast (cubed)
How to Make Italian Chicken Casserole
- Saute' sweet onion and mushrooms. I usually do them separate, then add them together when they are done.
- Prepare extra wide egg noodles, or pasta of choice, drain, and set aside.
- Whisk eggs in bowl. Place cubed chicken in eggs until ready for breading.
- In large frying pan, coat with non-stick spray, butter or EVOO, whatever your personal favorite is. Take cubed chicken out of egg mixture and drop into bread crumbs. Brown on each side, then set aside.
- In 9 X 13 casserole dish, place pasta, mushrooms, onions, chicken, and add chicken broth (and/or wine). Grate Muenster cheese over top. Bake @ 350 for 1/2 hour.
There are so many variations to this recipe, it is one that would be very easy to have a lot of fun with.
