This is a recipe that I just tried and it was not only simple, but fast, and really tasty.

Ingredients
- 2 medium eggs
- 1 cup italian bread crumbs
- 1 cup chicken broth
- 1/4 cup white wine (optional)
- 1 cup muenster cheese (grated)
- 1 medium sweet onion
- 1 medium pack of mushrooms
- 3-4 medium boneless skinless chicken breast (cubed)
How To Make italian chicken casserole

Step 1Saute' sweet onion and mushrooms. I usually do them separate, then add them together when they are done.

Step 2Prepare extra wide egg noodles, or pasta of choice, drain, and set aside.

Step 3Whisk eggs in bowl. Place cubed chicken in eggs until ready for breading.

Step 4In large frying pan, coat with non-stick spray, butter or EVOO, whatever your personal favorite is. Take cubed chicken out of egg mixture and drop into bread crumbs. Brown on each side, then set aside.

Step 5In 9 X 13 casserole dish, place pasta, mushrooms, onions, chicken, and add chicken broth (and/or wine). Grate Muenster cheese over top. Bake @ 350 for 1/2 hour. There are so many variations to this recipe, it is one that would be very easy to have a lot of fun with.
