italian baked chicken breasts
I wanted to make a special dinner for my mother's 91st birthday today. She likes chicken breasts and likes them made with the Kraft Fresh Take product - it has various flavors with bread crumbs and cheese. I did not have any, so I attempted to make my own. I threw some things together and they came out great. A lot less expensive. Hope you like it as much as my mother did. You can also vary this recipe by using other seasonings, such as cayenne pepper and hot sauce added to the bread crumbs, using different types of cheeses, or try chicken thighs.

These Italian baked chicken breasts prove you don't need to fry chicken for a crispy crust. With basil, garlic powder, lemon pepper, and paprika, the bread crumbs have a nice flavor. Adding oil, Parmesan cheese, and cheddar cheese means that once it bakes, the bread crumbs create a wonderful, savory crust. Inside, the chicken breasts are juicy and tender.
Ingredients
- 1 cup Italian bread crumbs
- 1/4 cup grated Parmesan cheese
- 1/4 cup finely shredded cheddar cheese
- 1/2 teaspoon salt
- 1/2 teaspoon pepper
- 1/2 teaspoon basil, dried or fresh finely chopped
- 1/2 teaspoon garlic powder
- 1/2 teaspoon lemon pepper
- 1/2 teaspoon paprika
- 1/4 cup extra virgin olive oil
- 6 - skinless, boneless chicken breasts
How To Make italian baked chicken breasts

Step 1Spray a 9 x 13 baking sheet with cooking spray or olive oil. I like to use foil for easy clean up. Preheat oven to 375 degrees F. Mix the Italian bread crumbs, seasonings, and the two types of cheese.

Step 2Blend the olive oil into the bread crumbs and seasoning mixture.

Step 3You may need to add more oil or bread crumbs until it is a rather thick consistency to allow it to stay atop the meat.

Step 4Pat the bread crumb mixture on top of the chicken.

Step 5Bake for 30 - 45 minutes until cooked, based on the thickness of the chicken.
