Ingredients

  • 1 cup flour
  • 2 teaspoons salt
  • 2 - (2-3 pound)fryers, cut, up to 8 legs
  • 1/2 cup oil
  • 1 - green pepper, cut up
  • 2 - onions, sliced
  • 1 cup water
  • 2 tablespoons vinegar
  • 1 can (20 ounces) sliced pineapple, drained (reserve juice)
  • 3 tablespoons cornstarch
  • 1/2 cup sliced almonds

How To Make island chicken

  • Step 1
    Mix flour and salt. Coat chicken. Brown chicken on all sides in oil over medium heat. Remove to roasting pan. Bake in 350 degree oven for 20 minutes.
  • Step 2
    Saute pepper and onions in remaining oil in skillet about 2 minutes. Add water and vinegar. Cut sliced pineapple into quarters.
  • Step 3
    Mix cornstarch and 1/2 cup reserved juice; stir into vegetable mixture. Cook over medium heat, stirring constantly, until mixture comes to a boil and boil 1 minute.
  • Step 4
    Stir in pineapple. Pour over chicken. Sprinkle with almonds. Continue baking about 20 minutes or until chicken is tender.
