Ingredients
- 1 cup flour
- 2 teaspoons salt
- 2 - (2-3 pound)fryers, cut, up to 8 legs
- 1/2 cup oil
- 1 - green pepper, cut up
- 2 - onions, sliced
- 1 cup water
- 2 tablespoons vinegar
- 1 can (20 ounces) sliced pineapple, drained (reserve juice)
- 3 tablespoons cornstarch
- 1/2 cup sliced almonds
How To Make island chicken

Step 1Mix flour and salt. Coat chicken. Brown chicken on all sides in oil over medium heat. Remove to roasting pan. Bake in 350 degree oven for 20 minutes.

Step 2Saute pepper and onions in remaining oil in skillet about 2 minutes. Add water and vinegar. Cut sliced pineapple into quarters.

Step 3Mix cornstarch and 1/2 cup reserved juice; stir into vegetable mixture. Cook over medium heat, stirring constantly, until mixture comes to a boil and boil 1 minute.

Step 4Stir in pineapple. Pour over chicken. Sprinkle with almonds. Continue baking about 20 minutes or until chicken is tender.
