2(2-3 pound)fryers, cut, up to 8 legs
1green pepper, cut up
1 can(s)(20 ounces) sliced pineapple, drained (reserve juice)
1/2 csliced almonds
How to Make Island Chicken
- Mix flour and salt. Coat chicken.
Brown chicken on all sides in oil over medium heat.
Remove to roasting pan.
Bake in 350 degree oven for 20 minutes.
- Saute pepper and onions in remaining oil in skillet about 2 minutes.
Add water and vinegar.
Cut sliced pineapple into quarters.
- Mix cornstarch and 1/2 cup reserved juice; stir into vegetable mixture.
Cook over medium heat, stirring constantly, until mixture comes to a boil and boil 1 minute.
- Stir in pineapple.
Pour over chicken.
Sprinkle with almonds.
Continue baking about 20 minutes or until chicken is tender.
