This is cheesy chicken, mushroom and rice delight has a slightly nutty flavor that tastes like a super creamy risotto! This mouth-watering dish is easy to make with very little prep time. Serve with hot rolls and you have a quick crowd pleaser!

  • 2 lb
    chicken breasts cut into small cubes
  • 1 tsp
    salt
  • 1/2 tsp
    coarse black pepper
  • 1 box
    sliced baby bella mushrooms
  • 3 tsp
    chopped jarred garlic
  • 1 lg
    sweet onion chopped
  • 4 Tbsp
    butter
  • 4 c
    chicken broth
  • 1 1/2 Tbsp
    lemon juice
  • 1 1/2 c
    jasmine rice
  • 1 c
    shredded parmesan cheese

    Add salt and pepper to the cut-up chicken and mix to coat it well.

    Turn your Instapot to sauté. Add two tablespoons of butter and allow it to melt. Add the chicken and mushrooms and sauté and stir occasionally until the chicken is slightly brown, about eight minutes.

    Add another two tablespoons of butter to the Instapot. Add the onions and garlic. Sauté for four minutes stirring frequently.

    Add the broth, lemon juice and jasmine rice to the Instapot. Stir well.

    Set the Instapot to pressure cook for eight minutes. When finished, let it release naturally for two minutes. Then quick release.

    Remove the lid and stir in the parmesan cheese. Add more salt and pepper as necessary to taste.
