Ingredients
- 2 pounds chicken breasts cut into small cubes
- 1 teaspoon salt
- 1/2 teaspoon coarse black pepper
- 1 box sliced baby bella mushrooms
- 3 teaspoons chopped jarred garlic
- 1 large sweet onion chopped
- 4 tablespoons butter
- 4 cups chicken broth
- 1 1/2 tablespoons lemon juice
- 1 1/2 cups jasmine rice
- 1 cup shredded parmesan cheese

Step 1Add salt and pepper to the cut-up chicken and mix to coat it well.

Step 2Turn your Instapot to sauté. Add two tablespoons of butter and allow it to melt. Add the chicken and mushrooms and sauté and stir occasionally until the chicken is slightly brown, about eight minutes.

Step 3Add another two tablespoons of butter to the Instapot. Add the onions and garlic. Sauté for four minutes stirring frequently.

Step 4Add the broth, lemon juice and jasmine rice to the Instapot. Stir well.

Step 5Set the Instapot to pressure cook for eight minutes. When finished, let it release naturally for two minutes. Then quick release.

Step 6Remove the lid and stir in the parmesan cheese. Add more salt and pepper as necessary to taste.
