Ingredients
- 8 chicken thighs
- 2 tablespoons vegetable oil
- 1/3 cup soy sauce
- 1/4 cup each sugar and white vinegar
- 5 cloves garlic minced
- 2 bay leaves
- 1 medium yellow onion diced
- scallions and rice for serving
How To Make instant pot chicken adobo

Step 1Season the chicken with salt and pepper. Add oil to instant pot. Select saute and brown the chicken on both sides. Work in batches of 4.

Step 2Add the chicken back to the instant pot and add the soy sauce, sugar, vinegar, garlic, bay leaves, and onion.

Step 3Place the lid and select pressure cook on high for 10 minutes. Use quick release. Select saute again and bring to a boil and let sauce reduce to a dark brown color about 20 minutes. Set the chicken aside. Strain the sauce discarding the solids.

Step 4Top the rice with chicken thigh and ladle sauce over and garnish with scallions.
