Ingredients

  • 8 chicken thighs
  • 2 tablespoons vegetable oil
  • 1/3 cup soy sauce
  • 1/4 cup each sugar and white vinegar
  • 5 cloves garlic minced
  • 2 bay leaves
  • 1 medium yellow onion diced
  • scallions and rice for serving

How To Make instant pot chicken adobo

  • Step 1
    Season the chicken with salt and pepper. Add oil to instant pot. Select saute and brown the chicken on both sides. Work in batches of 4.
  • Step 2
    Add the chicken back to the instant pot and add the soy sauce, sugar, vinegar, garlic, bay leaves, and onion.
  • Step 3
    Place the lid and select pressure cook on high for 10 minutes. Use quick release. Select saute again and bring to a boil and let sauce reduce to a dark brown color about 20 minutes. Set the chicken aside. Strain the sauce discarding the solids.
  • Step 4
    Top the rice with chicken thigh and ladle sauce over and garnish with scallions.
