We use to make this a lot, but haven't in a few years. I think this recipe came from a cooking show years ago.

Ingredients

  • 8 - pieces of chicken skinned and scored
  • 2 cups plain yogurt
  • 1/2 cup olive oil, extra virgin
  • 1/4 cup lemon juice
  • 1 tablespoon fresh ginger, smashed & chopped fine
  • 1 clove garlic, crushed
  • 4 teaspoons cumin
  • 1 1/2 teaspoons cardamon, ground
  • 2 teaspoons cayenne pepper
  • 2 1/2 teaspoons salt
  • few dash red food coloring (optional)

How To Make indian chicken

  • Step 1
    Put all ingredients in a large zipper bag and allow to marinate for a few hours.
  • Step 2
    Heat oven to 450.
  • Step 3
    Remove from marinade and place on a grill pan (or use a wire rack with a sheet pan under it). Bake for 30 minutes or until juices run clear.
