We use to make this a lot, but haven't in a few years. I think this recipe came from a cooking show years ago.

Ingredients

  • 8
    pieces of chicken skinned and scored
  • 2 c
    plain yogurt
  • 1/2 c
    olive oil, extra virgin
  • 1/4 c
    lemon juice
  • 1 Tbsp
    fresh ginger, smashed & chopped fine
  • 1 clove
    garlic, crushed
  • 4 tsp
    cumin
  • 1 1/2 tsp
    cardamon, ground
  • 2 tsp
    cayenne pepper
  • 2 1/2 tsp
    salt
  • few dash(es)
    red food coloring (optional)

How to Make Indian Chicken

Step-by-Step

  1. Put all ingredients in a large zipper bag and allow to marinate for a few hours.
  2. Heat oven to 450.
  3. Remove from marinade and place on a grill pan (or use a wire rack with a sheet pan under it). Bake for 30 minutes or until juices run clear.
