Ingredients

  • 4 bone in chicken thighs
  • 2 tablespoons butter
  • 3 shallots chopped
  • 3 cloves garlic minced
  • 1 pound fresh mushrooms sliced
  • 1 cup dry white wine
  • 2 cups beef stock
  • 2 tablespoons tomato paste
  • 3 tablespoons cold water
  • 2 tablespoons cornstarch
  • 2 tablespoons fresh parsley small chop
  • 2 teaspoons fresh tarragon choped
  • salt and pepper to taste

How To Make hunter chicken

  • Step 1
    season the chicken with salt and pepper. heat butter in a skillet. Cook the chicken in the butter for about 20 minutes until no longer pink. Remove chicken and set aside and keep warm.
  • Step 2
    Add the shallots, garlic, and mushrooms to the pan and cook about 4 minutes. Season with salt and pepper. Pour in the wine and cook over high heat another 4 minutes. Add the beef stock and tomato paste. Mix well. Mix the cornstarch and water together
  • Step 3
    Bring the liquid to a boil and pour in the cornstarch mixture. Mix well. Add the parsley and tarragon. Add the chicken back in and cook for 5 more minutes.
