Ingredients

4 cups instant rice cooked (brown or white) both work great
1 can cream of mushroom soup
1 can cream of chicken
6 large chicken breasts, boneless and skinless (you can use turkey breast)
1 1/2 cups shredded cheddar cheese
1 1/2 cups shredded mozzarella cheese
4 cups tatter tots (you will need enough to cover the entire dish
1 cup canned or frozen well drained green beans kitchen or garden cut
1 cup corn, frozen or canned whole kernel well drained

How To Make hubbies tater tot casserole

Step 1

you will need a large casserole dish or glass baking dish. preheat oven to 350 degrees. and place oven rack on middle shelf. my husband uses my glass Pyrex lasagna dish.

Step 2

in medium bowl mix together corn and green beans. in a large glass bowl mix together the two soups. But do not thin out with water. mix well so both soups are well blended.
Step 3

brown chicken breast in frying pan season with the following seasonings, 1/4 tsp of each, black pepper,salt,garlic powder,onion powder,Italian,basil,and chili powder.cook till almost done. slice into half. drain away juices and set aside.
Step 4

start by placing enough soup on the bottom of the casserole dish, enough to cover. Then layer in the rice, vegetables and chicken, adding a thin layer of soup and cheese between each layer. You will need a 1/2 cup cheese to top off with. cover the chicken with soup and then frozen tater tots. do not add the last 1/2cup of cheese till almost fully cooked, tater tots will be a nice golden brown. sprinkle with remaining cheese and bake till melted.
