My mom used to make this, but w/ regular bread crumbs. I find that I like the panko crumbs better.

Ingredients

  • 1-1/2 cup light buttermilk
  • 1 tablespoon spicy dijon mustard
  • 1 tablespoon hot sauce, like frank's
  • 8 - pieces of chicken, like drumsticks, legs, etc.
  • 1-1/2 cup panko bread crumbs
  • 1/2 cup ground cornmeal
  • 1 teaspoon paprika
  • 1 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon ground red pepper

How To Make hot oven fried chicken

  • Step 1
    In lg bowl, whisk together buttermilk, mustard and hot sauce. Add chicken to mix, toss to coat evenly. Cover, refrigerate 1 hr to marinate.
  • Step 2
    Heat oven to 400. Lightly spray a baking sheet w/ cooking spray. In lg shallow bowl, combine panko crumbs, cornmeal, paprika, garlic powder, salt and ground red pepper. Mix well.
  • Step 3
    Remove chicken from marinade. Roll the chicken into panko crumb mix evenly to coat. Place chicken on a rack on baking sheet. Spray chicken w/ cooking spray. Bake about 45 mins, or until chicken is cooked through.
