I have made this recipe numerous times, it is quick and easy and both adults and children love it.

Ingredients

  • 2 tablespoons diced onion
  • 4 tablespoons butter, divided
  • 2 cups cooked chicken
  • 1 can cream of chicken soup
  • 1/2 cup mayonnaise
  • 2 tablespoons lemon juice
  • 2 - boiled eggs, chopped
  • 1 jar 4 oz pimientos, drained
  • 1 teaspoon salt
  • 1/4 teaspoon black pepper
  • 3/4 cup ritz crackers

How To Make hot chicken salad casserole

  • Step 1
    Preheat oven to 350. Grease 13x9x2 baking dish. Saute onion in 2 Tbls. butter until tender.
  • Step 2
    In large bowl, combine onion, chicken soup, mayonnaise, lemon juice, eggs, pimiento, salt & pepper, stir well and pour into prepared baking dish.
  • Step 3
    Melt 2 Tbls. butter, crumble crackers and mix with butter. Sprinkle on top of casserole, then bake for 30 minutes
