Ingredients
- 2 tablespoons diced onion
- 4 tablespoons butter, divided
- 2 cups cooked chicken
- 1 can cream of chicken soup
- 1/2 cup mayonnaise
- 2 tablespoons lemon juice
- 2 - boiled eggs, chopped
- 1 jar 4 oz pimientos, drained
- 1 teaspoon salt
- 1/4 teaspoon black pepper
- 3/4 cup ritz crackers
How To Make hot chicken salad casserole

Step 1Preheat oven to 350. Grease 13x9x2 baking dish. Saute onion in 2 Tbls. butter until tender.

Step 2In large bowl, combine onion, chicken soup, mayonnaise, lemon juice, eggs, pimiento, salt & pepper, stir well and pour into prepared baking dish.

Step 3Melt 2 Tbls. butter, crumble crackers and mix with butter. Sprinkle on top of casserole, then bake for 30 minutes
