hot chicken appetizers
I had to prepare something to take to a party tonight. After working all day, I had no ideas. This is what I threw together, and it got such good reviews, I figured I'd best write it down. Enjoy! Measurements are approximate, since I wasn't measuring when I made it. Adjust to suit your taste.

Want a fun and easy party appetizer? Try these hot chicken appetizers. They're warm and creamy with just the right amount of crunch from puff pastry. Once baked, the puff pastry is flaky and crispy. Canned chicken is transformed by adding cherry tomatoes, chopped onion, baby spinach, cream cheese, and Parmesan cheese to create a rich and savory filling. This is a versatile bite-sized appetizer that could be served as a basic party appetizer, but it's also a little bit elevated for a special party like New Year's Eve.
Ingredients
- 1 tablespoon butter
- 1/3 cup finely chopped onion
- 12 - cherry tomatoes, chopped
- 3/4 cup baby spinach, chopped
- 3 cloves garlic, minced
- 8 ounces cream cheese
- 1 can chicken, drained and chopped (13 ounce can)
- 1 - puff pastry sheet, thawed
- - grated Parmesan cheese
How To Make hot chicken appetizers

Step 1Melt butter in a saucepan over medium-high heat. Add onions and tomatoes. Cook until onions are translucent.

Step 2Reduce the heat. Stir in spinach and garlic.

Step 3Cut cream cheese into small chunks and add to the saucepan. Stir until well mixed and smooth.

Step 4Add chicken to the saucepan and stir until all ingredients are incorporated. Add salt and pepper to taste. Remove from heat and set aside.

Step 5Preheat oven to 400 degrees F. Place three mini muffin pans on a large cookie sheet. This is to make them easier to get in and out of the oven - not completely necessary. Unfold puff pastry sheet onto a lightly floured surface and roll to about half the original thickness. Be sure to use enough flour to keep the pastry from sticking, but don't overdo it.

Step 6Using a 2" biscuit cutter, cut pastry into circles.

Step 7Press one circle into the bottom of each section of mini muffin pans. The pastry should extend only about halfway up the side of the sections.

Step 8Place about 1 tablespoon of chicken filling into each pastry-lined muffin section. Filling should pile up in the middle, leaving the edges of the pastry exposed.

Step 9Lightly sprinkle the filling with Parmesan cheese.

Step 10Bake for 20 minutes.

Step 11Remove from pan and serve hot. Makes about 36 appetizers.
