Ingredients
- 1/2 pound chicken breast, boneless, skinless, cut in 1/4
- 1 - white onion, medium, diced
- 2 tablespoons red chili powder
- 1 teaspoon curry powder
- 1/2 - ground cumin
- 1 - garlic clove, minced
- 1 teaspoon salt
- 1 teaspoon lemon
- 1 teaspoon pepper
- 3/4 cup water
- 2 tablespoons olive oil
- 1 tablespoon vegetable oil
How To Make hot and spicy chicken

Step 1Recommended fillings and wrapper: flour tortillas, cheddar cheese, tomatoes lettuce, onion, salsa.

Step 2In glass or stainless steel bowl combine all ingredients except olive oil and vegetable oil.

Step 3Mix thoroughly to spread spices over chicken, water should be completely absorbed, refrigerate for 1 hour.

Step 4After refrigeration add olive oil, and stir until chicken is well coated with oil, spice aromas will be noticeably lighter.

Step 5Heat vegetable oil in non-stick pan, and add mixture, frying on medium heat. Cover until water has separated from chicken, and is boiling.

Step 6Leave uncovered, on low heat, to simmer until almost all water has evaporated. Total cook time is less than ten minutes, do not overcook.

Step 7Place prepared mixture in center of flour tortillas, add cheese and other fillings as desired (suggestions above).

Step 8Fold in half, or roll like burrito. Top with beans or spanish rice.
