Honolulu Chicken

Ingredients

·1/4 cup flour

·1/4 tsp. salt

·dash black pepper

·1 broiler chicken, cut up

·oil
-
·1 jar peach preserves

·1/2 cup barbecue sauce

·1/2 cup chopped onion
-
·2 tbsp. soy sauce

·1 large can water chestnuts, drained and sliced

·1 green pepper, cut into strips

·hot cooked rice
How to Make Honolulu Chicken
- In large bowl, mix flour, salt and pepper. Coat the chicken with the seasoned flour. In large skillet, brown the chicken in a small amount of oil. Drain.
- In another bowl, mix the preserves, barbecue sauce, onion and soy sauce and pour mixture over the chicken. Cover and simmer for 40 minutes or til chicken is tender
- Add water chestnuts and green pepper during last 10 minutes of cooking. Serve with rice.
