Ingredients

  • - 1/4 cup flour
  • - 1/4 tsp. salt
  • - dash black pepper
  • - 1 broiler chicken, cut up
  • - oil
  • - 1 jar peach preserves
  • - 1/2 cup barbecue sauce
  • - 1/2 cup chopped onion
  • - 2 tbsp. soy sauce
  • - 1 large can water chestnuts, drained and sliced
  • - 1 green pepper, cut into strips
  • - hot cooked rice

How To Make honolulu chicken

  • Step 1
    In large bowl, mix flour, salt and pepper. Coat the chicken with the seasoned flour. In large skillet, brown the chicken in a small amount of oil. Drain.
  • Step 2
    In another bowl, mix the preserves, barbecue sauce, onion and soy sauce and pour mixture over the chicken. Cover and simmer for 40 minutes or til chicken is tender
  • Step 3
    Add water chestnuts and green pepper during last 10 minutes of cooking. Serve with rice.
