Ingredients

  • 1 tablespoon olive oil
  • 1 clove garlic, minced
  • 4 boneless skinless chicken thighs, sliced into small pieces
  • 1/4 cup chicken stock
  • 1/4 cup honey
  • 1/2 cup cashew nuts
  • boston lettuce leaves
  • 1 cup julienne carrots
  • 1 bunch green onions, chopped
  • kecap manis or hoisin sauce, for drizzle

How To Make honeyed cashew chicken lettuce wraps

  • Step 1
    Heat oil in a skillet. Add the garlic and saute 30 seconds. Add the chicken pieces and chicken stock. Bring to a boil and cook for 5 minutes. Pour in the honey and add the cashews; cook until liquid is mostly evaporated.
  • Step 2
    Serve in lettuce cups topped with carrots and scallions and with a sweet soy or hoisin sauce drizzle.
