honey pecan chicken salad, popeye's

Every time I took a bus trip to Longaberger (I was a consultant), everyone knew I was headed to Popeye's in Dresden for this chicken salad on a croissant, onion rings, and a peanut butter shake. They knew to expect pointing when asking directions, cause I was sure to have a mouth full! Dave Longaberger grew up in Dresden, and his nickname was Popeye. The restaurant used to be run by his family for a long time, and this was a favorite of many. Now that they aren't as active, it was even more important to share this great salad. Feel free to smile and point rather than reply while eating it! :)

Ingredients

  • 1 cup mayo
  • 1/2 cup relish
  • 2 tablespoons minced onion
  • 1 tablespoon honey
  • 1 1/2 tablespoons sugar
  • 1 teaspoon salt
  • 1/4 teaspoon white pepper (i just use the black pepper in my grinder)
  • 3/4 cup chopped celery
  • 3/4 cup toasted pecans, coarsely chopped
  • 1 1/2 pounds chopped cooked chicken (about 4 cups)
  • - at home i have been known to add dried cranberries also

How To Make honey pecan chicken salad, popeye's

  • Step 1
    Combine the mayonnaise, relish, onion, honey, sugar, salt and white pepper in a bowl and mix well. Stir in the celery and pecans. Fold in the chicken. Adjust the seasonings to taste. Chill, covered, in the refrigerator. Serve on crusty French bread rolls with potato chips and carrot sticks, or on a bed of salad greens, garnished with a bunch of red grapes.
