This was great. We all loved it and will make it again. We used skin on thighs, but I did debone them. A little extra work but well worth it. The cook time... well, I make sure the chicken is done.

The glaze on this simple-to-make grilled chicken is great. It's sweet and savory with a little bit of a kick. The spice, though, can be controlled by the amount of red pepper flakes added. Brushing the chicken at the end of the cooking process allows the honey glaze to caramelize a bit from the heat from the grill (but not burn). A great dinner option to throw on the grill during warmer weather when you don't want to heat up the kitchen.

Ingredients For honey-glazed grilled chicken thighs

  • 1/4 c
    honey
  • 2 Tbsp
    soy sauce
  • 2 clove
    garlic, minced or 1/4 teaspoon garlic powder
  • 1/4 tsp
    red pepper flakes, to taste
  • 4
    chicken thighs, boneless and skinless
  • 2 Tbsp
    olive or vegetable oil
  • 1/4 tsp
    salt
  • 1/4 tsp
    black pepper coarse ground

While this is for chicken thighs, you can use any cut of chicken. We did have to grill our chicken slightly longer.
  • Honey, soy sauce, red pepper flakes, and garlic in a bowl.

    Heat gas or charcoal grill. In a small bowl, combine honey, soy sauce, red pepper flakes (if you use them), and garlic; blend well with a wire whisk. Set aside.
  • Adding salt and pepper to chicken thighs.

    Brush chicken thighs with oil; sprinkle with salt and pepper.
  • Grilling the chicken thighs.

    When the grill is heated, place the chicken on a gas grill over medium heat or on a charcoal grill 4 to 6 inches from medium coals. Cook covered for 8 to 12 minutes or until juice is clear when the center of the thickest part is cut (180°F); turning once.
  • Brushing chicken with honey glaze.

    Brush with honey mixture during the last 2 minutes of cooking time.
