I like fruit with chicken, but you can omit the apricots. this goes great with brown rice and a salad

How to Make Honey balsamic chicken with dried apricots soaked

Step-by-Step

  1. soak your bag of apricots in good white wine 1/2 bottle
  2. prep in a bowl balsamic vinegar and honey salt/pepper
  3. rinse 4 chicken breasts- pat dry
    (optional) I brine my chicken overnight in ice water with salt. like Martha Stewart
  4. soak patted dry chicken in honey balsamic bowl skin down but saturate both sides 1/2 hour soak
  5. Fry chicken skin side down 8 minutes high heat.
    either leave in oven friendly pan or transfer to a cooking dish. turn skin side up add apricots and some of the wine :juice cook in oven 8 to 10 minutes pre heated oven 375
