chicken, broiler or fryer, skinned
3/4 c
yellow squash, shredded
3/4 c
zucchini, shredded
1/2 c
onion, finely chopped
1/2 c
celery, finely chopped
1.25 c
bread crumbs, toasted and wholewheat
1 large
clove garlic, crushed
1 large
egg, beaten
1/4 c
pecan pieces
1/4 tsp
1/4 tsp
3 Tbsp
apple juice
2 Tbsp

How to Make Honey-Baked Chicken


  • 1Discard giblets and neck of chicken (or save for stock).
  • 2Rinse chicken under cold, running water and pat dry.
  • 3Set aside.
  • 4Coat a large nonstick skillet with pam; place over medium-high heat until hot.
  • 5Add yellow squash, zucchini, onion, celery and garlic, and saute until tender-crisp.
  • 6Drain.
  • 7Combine vegetable mixture, breadcrumbs, egg, pecans, salt and pepper in a medium bowl; stir well.
  • 8Place chicken, breast side up, on a rack in a roasting pan that has been coated with cooking spray.
  • 9Stuff lightly with dressing mixture.
  • 10Truss chicken (or put ball of foil in opening).
  • 11Combine apple juice and honey, stirring well.
  • 12Brush chicken with half of apple juice-honey mixture.
  • 13Bake at 350 for 1 1/2 - 2 hours or until drumsticks are easy to move and juices run clear, basting occasionally with remaining apple-honey mixture.
