Honey-Baked Chicken

chicken, broiler or fryer, skinned
3/4 c
yellow squash, shredded
3/4 c
zucchini, shredded
1/2 c
onion, finely chopped
1/2 c
celery, finely chopped
1.25 c
bread crumbs, toasted and wholewheat
1 large
clove garlic, crushed
1 large
egg, beaten
1/4 c
pecan pieces
1/4 tsp
1/4 tsp
3 Tbsp
apple juice
2 Tbsp


1Discard giblets and neck of chicken (or save for stock).
2Rinse chicken under cold, running water and pat dry.
3Set aside.
4Coat a large nonstick skillet with pam; place over medium-high heat until hot.
5Add yellow squash, zucchini, onion, celery and garlic, and saute until tender-crisp.
7Combine vegetable mixture, breadcrumbs, egg, pecans, salt and pepper in a medium bowl; stir well.
8Place chicken, breast side up, on a rack in a roasting pan that has been coated with cooking spray.
9Stuff lightly with dressing mixture.
10Truss chicken (or put ball of foil in opening).
11Combine apple juice and honey, stirring well.
12Brush chicken with half of apple juice-honey mixture.
13Bake at 350 for 1 1/2 - 2 hours or until drumsticks are easy to move and juices run clear, basting occasionally with remaining apple-honey mixture.
