homemade oven baked/fried chicken

This was my mom's recipe, which is a homemade version of Shake & Bake. It's very tasty, and it fits the bill for good home cooking with no preservatives! She had two ways of making this; I have given you both. The second method is more of a fried chicken substitute.

Ingredients

  • 1 cup fine bread crumbs or crackers
  • 1/2 cup flour
  • 1 teaspoon corn starch
  • 1 3/4 teaspoons onion powder
  • 1/4 teaspoon garlic powder
  • 1/2 teaspoon poultry seasoning
  • 1 teaspoon paprika
  • 1 teaspoon salt
  • 1 teaspoon seasoned salt
  • 1 teaspoon sugar
  • 5 teaspoons oil (if you use the second baking method)
  • - optional additions: parmesan cheese, oregano, pepper

How To Make homemade oven baked/fried chicken

  • Step 1
    Preheat oven to 400 degrees.
  • Step 2
    Coat chicken and place on baking sheet, skin side up.
  • Step 3
    Cover with tin foil and bake for 30 minutes.
  • Step 4
    Remove foil and bake 30 minutes longer.
  • Step 5
    -OR METHOD #2- Dip chicken in milk and then coat with the mixture. Place chicken in shallow pan, skin side up, and bake at 375 degrees for 30 minutes. Brush with oil and bake 30 minutes more or until golden brown. (This is more like a fried chicken with this method.)
