This is so delicious. You can mix it up any way you like you can use rice instead of noodles. you can use any fresh veggies you like. Healthy

Ingredients

  • SAUCE
  • 1 cup red currant jelly
  • 1/2 cup hoisin sauce
  • 2 tablespoons mirin
  • 3 cloves garlic minced
  • 1/2 teaspoon sambal olek
  • CHICKEN
  • 1 pound ground chicken
  • 4 cloves garlic minced
  • 1 teaspoon ginger grated
  • 8 ounces shittake mushrooms small dice
  • 1 cup bean sprouts
  • VEGGIES
  • 1/2 - head red cabbage sliced
  • 1/2 cup cilantro chopped
  • 1/2 bunch scallions chopped
  • 2 tablespoons hemp seed hearts
  • NOODLES
  • 8 ounces rice noodles cook according to package directions and drained

How To Make hoisin chicken power bowl

  • Step 1
    For the sauce. Mix all ingredients together on stove top cook until jelly has dissolved. Set aside.
  • Step 2
    Cook the ground chicken with the hoisin sauce, ginger and garlic. When the chicken is almost done add the mushrooms and the bean sprouts. Stir in the sauce mixture.
  • Step 3
    Cook the rice noodles and drain
  • Step 4
    To assemble dish. Place noodles in a bowl. Top with chicken mixture. Top with red cabbage, cilantro, green onions and hemp seed hearts.
