Ingredients
- SAUCE
- 1 cup red currant jelly
- 1/2 cup hoisin sauce
- 2 tablespoons mirin
- 3 cloves garlic minced
- 1/2 teaspoon sambal olek
- CHICKEN
- 1 pound ground chicken
- 4 cloves garlic minced
- 1 teaspoon ginger grated
- 8 ounces shittake mushrooms small dice
- 1 cup bean sprouts
- VEGGIES
- 1/2 - head red cabbage sliced
- 1/2 cup cilantro chopped
- 1/2 bunch scallions chopped
- 2 tablespoons hemp seed hearts
- NOODLES
- 8 ounces rice noodles cook according to package directions and drained
How To Make hoisin chicken power bowl

Step 1For the sauce. Mix all ingredients together on stove top cook until jelly has dissolved. Set aside.

Step 2Cook the ground chicken with the hoisin sauce, ginger and garlic. When the chicken is almost done add the mushrooms and the bean sprouts. Stir in the sauce mixture.

Step 3Cook the rice noodles and drain

Step 4To assemble dish. Place noodles in a bowl. Top with chicken mixture. Top with red cabbage, cilantro, green onions and hemp seed hearts.
