1 - 8 oz pkgmushrooms, chopped

1/2 lgonion, chopped
-
1/4 tsponion powder
-
1/4 tspgarlic powder
-
2 wedgesthe laughing cow light creamy swiss cheese

2chicken breasts, boneless & skinless, pounded to 1/2" thickness

1/8 tspsalt & pepper
How To Make hg creamy mushroom stuffed chicken

1Preheat oven to 350 degrees F. Spray an 8" X 8" baking pan with nonstick spray.

2Bring a skillet sprayed with nonstick spray to medium-high heat. Cook & stir mushrooms & onion until softened & lightly browned, about 6 minutes.

3Transfer cooked veggies to a medium bowl & blot away excess moisture. Add onion powder, garlic powder & cheese wedges, breaking the wedges into pieces as you add them. Stir until cheese has melted & coated the veggies.

4Season chicken cutlets with salt & pepper. Evenly divide veggie mixture between the centers of the cutlets.

5Roll up each cutlet over the mixture. If needed, secure with toothpicks. Place in the baking pan.

6Cover pan with foil & bake for 20 minutes.

7Remove foil & bake until chicken is cooked through, about 15 minutes.
