Ingredients

  • 20
    chicken tenderloins, cut into 2-inch strips
  • 2 Tbsp
    olive oil
  • 1/2 c
    light sour cream
  • 3 clove
    garlic, minced
  • 1/4 c
    fresh basil, chopped
  • 1 small
    red pepper, cut in strips
  • 1/2 tsp
    dried oregano
  • 1/3 c
    toasted walnuts, chopped
  • 9 oz
    fresh spinach tortellini, prepared according to directions
  • 1/4 tsp
    salt
  • 1/8 tsp
    cayenne pepper
  • ·
    fresh basil leaves

How to Make Herbed Chicken with Tortellini

Step-by-Step

  1. In small bowl, mix together sour cream, basil, oregano, salt and cayenne pepper; set aside. In fry pan, place oil and heat to medium-heat temperature. Add chicken and sauté about 5 minutes.
  2. Stir in garlic and red pepper strips. Sauté, stirring, 2 minutes. Reduce heat to low temperature. Stir in sour cream mixture and heat thoroughly, about 2 minutes.
  3. Place cooked tortellini on serving dish and top with chicken mixture. Sprinkle with walnuts and garnish with fresh basil leaves.
