chicken tenderloins, cut into 2-inch strips
2 Tbsp
olive oil
1/2 c
light sour cream
3 clove
garlic, minced
1/4 c
fresh basil, chopped
1 small
red pepper, cut in strips
1/2 tsp
dried oregano
1/3 c
toasted walnuts, chopped
9 oz
fresh spinach tortellini, prepared according to directions
1/4 tsp
1/8 tsp
cayenne pepper
fresh basil leaves

How to Make Herbed Chicken with Tortellini


  • 1In small bowl, mix together sour cream, basil, oregano, salt and cayenne pepper; set aside. In fry pan, place oil and heat to medium-heat temperature. Add chicken and sauté about 5 minutes.
  • 2Stir in garlic and red pepper strips. Sauté, stirring, 2 minutes. Reduce heat to low temperature. Stir in sour cream mixture and heat thoroughly, about 2 minutes.
  • 3Place cooked tortellini on serving dish and top with chicken mixture. Sprinkle with walnuts and garnish with fresh basil leaves.
