hearty chicken & veggie casserole

This was a meal my mom would make on the fly... I tweaked it just a little to add more veggies and make a creamier "gravy"... everyone loves this dish, and it goes well with mashed potatoes or over a bed of egg noodles. I mix and match my soups to make different meals. You can do cream of broc and cheddar, chicken and mushroom, what ever "tickles your fancy"... enjoy!

Ingredients
- 1 1/2 pounds chicken tenders or chicken breasts
- 1 can campbells cream of chicken soup
- 1 can campbells cream of mushroom (or broccoli) soup
- 1 can sliced mushrooms (or 1 bag of frozen broc, chopped)
- 1 cup milk
- 1/4 pound swiss cheese
- 1/4 pound american cheese
- 2 tablespoons butter
- 1 cup stuffing mix, herb-seasoned (i use pepperidge farms)
How To Make hearty chicken & veggie casserole

Step 1Preheat oven to 350. In large bowl, add your choice of soups, your choice of veggies and milk to make your "gravy". If you plan on serving over egg noodles, you could add an extra can of soup and more milk to make extra.

Step 2Place chicken in casserole dish and layer cheese on top of raw chicken. Pour soup mixture over chicken.

Step 3in small saucepan, heat butter and add stuffing. You don't want to cook the stuffing, the butter just prevents the stuffing from burning.

Step 4sprinkle stuffing mixture over casserole evenly.

Step 5cook for about an hour, or until chicken is done. depending on your choice of chicken, one might take longer than the other. A great indicator of this dish being done... the sauce will start to bubble.
