hearty chicken soup

Chicken soup is one of our family favorites all winter long. This recipe is the one we all love best! While it looks like a lot of ingredients, its easy and well worth the small effort ... promise!

Ingredients

  • 3 cups chicken breast, cooked, diced (i use two 2 large breasts, parboiled)
  • 2 packages swanson chicken broth (32 oz. each)
  • 4 1/2 cups water
  • 3 - knorr chicken bouillion *specifically knorr, which is actually 2 regular cubes in each block* and i find the flavor best
  • 3 - bay leaves
  • 1/2 teaspoon italian seasoning
  • 1/4 teaspoon poultry seasoning
  • 3 tablespoons dried minced onion (or 1/3 cup diced fresh onion)
  • 1/4 teaspoon black pepper
  • 1 teaspoon parsley flakes
  • 1 teaspoon minced garlic
  • 1 can hunts tomato sauce (8 oz)
  • 2 - large carrots, sliced thin
  • 1/2 - celery heart, including inner leaves, sliced thin
  • 1/2 cup rice

How To Make hearty chicken soup

  • Step 1
    Combine all ingredients EXCEPT rice in a large pot.
  • Step 2
    Over medium/high heat, bring to a rolling boil.
  • Step 3
    Reduce heat, cover and simmer one hour.
  • Step 4
    Add rice, stir, cover and cook another 20 minutes or until rice is cooked.
  • Step 5
    Serve and enjoy :)
  • Step 6
    *While we've settled into the chicken rice variation most recently as our favorite, sometimes we switch to pasta. Cook as above, and instead of adding rice, add pasta and cook another 5 - 10 minutes until your choice of pasta is cooked through.
