Ingredients
- 4 - 6 cloves garlic, minced
- 4 ribs - celery, chopped
- 4 - carrots, chipped
- 1 large red onion, chopped
- 4 tablespoons olive oil, extra virgin
- 58 oz. packages chicken stock
- 1/4 cup parsley
- 2 tablespoons thyme, dried
- - salt & pepper, to taste
- 1 teaspoon poultry seasoning
- 1 can evaporated milk
- 1 - rotisserie chicken, flavor of your choice, meat picked off bones, chopped into bite sized pieces (including skin)
- 1 package egg noodles, no-yolk variety or 3 c rice

Step 1Cook first 5 ingredients in a Dutch oven 5 minutes, stirring constantly. Add chicken stock & next 5 ingredients. Bring to a boil; reduce heat & simmer, partially covered, 25 minutes.
