This makes for a great meal any time of year. You can put in all shrimp, all chicken or all sausage. We like it best with a little bit of all 3 meats and alot of okra for a very hearty dish.

Ingredients

  • 2 - onions, sliced
  • 1 - green pepper, diced
  • 1-2 package frozen cut okra or 1-2 lbs fresh, stemmed & cut into 1" pieces
  • 2 tablespoons butter
  • 3 cups water
  • 1 teaspoon hot sauce
  • 2 tablespoons flour
  • 1 can diced tomatoes
  • 1 teaspoon salt
  • 1/4 teaspoon pepper
  • 1/8 teaspoon garlic powder
  • 1 - bay leaf
  • 1-2 pound any combination of the following: shrimp, diced chicken and/or sliced sausage

How To Make gumbo

  • Step 1
    Saute vegetable in butter until done.
  • Step 2
    Add flour & stir until bubbly.
  • Step 3
    Remove from heat & stir in all ingredients, except shrimp.
  • Step 4
    Simmer, uncovered for 45 minutes on low.
  • Step 5
    Add shrimp & cook until no longer pink.
  • Step 6
    Remove the bay leaf & discard.
  • Step 7
    Serve over cooked rice.
