Grilled Kuhlua Chicken

Colleen Sowa

This is so good! Try it you'll like it!!!

I made up this recipe several years ago for a back yard grilling picnic. It was a big hit!

In the time section:
I put 20 minutes in the prep time for assembling and cooking the sauce.
The cooking time, is for the chicken breasts.

The alcohol cooks off and just leaves the great flavor! Enjoy!

1 large
onion (minced fine)
3 Tbsp
1/2 c
1/2 tsp
each: garlic powder, salt, pepper
1/2 c
brown sugar, firmly packed
1/2 c
pineapple juice
4 dash(es)
tabasco sauce (optional or to taste)
1 can(s)
(6 ounce) tomato paste
2 can(s)
(tomato paste can) water

3/4 c
pineapple juice
3 Tbsp
corn starch

8 - 12 large
boneless, skinless chicken breasts (can use other chicken parts too)

1Saute the onions in the butter until onions are cooked and transucent. Be careful not to burn.

Add all sauce ingredients (but not thickening ingredients.

Simmer for 10 minutes.

Mix together thickening ingredients. Slowly add to the sauce while stirring constantly. When sauce is thickened, remove from heat.

*** You can make this on the grill, or in your kitchen and bring it along... your choice.
2Put your chicken breasts on the grill and cook until almost done on one side. (About 5 inches from the heat source). Turning with a tongs (poking with a fork will dry out your chicken).

Using a sauce mop or brush, coat the chicken with the sauce. Turn chicken over and coat it again. Do this every minute or two until the chicken is done. Before removing from the grill, coat both side and put on a plate.
3*** Make extra sauce available to your guests!

*** Serve with corn on the cob and a salad.
