Ingredients
- 6 - chicken breast halves, skinless and boneless
- MARINADE:
- 2 tablespoons lemon juice
- 2 tablespoons olive oil, extra virgin
- 2 tablespoons red wine vinegar
- 2 tablespoons oregano, fresh
- 2 tablespoons parsley flakes
- 4 cloves garlic, minced
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- DRESSING:
- 1 cup olive oil, extra virgin
- 1 cup lemon juice
- 4 tablespoons basil, fresh
- 3 5.3 ounces oikos plain greek yogurt
- 1 tablespoon anchovy paste (optional)
- 8 cloves garlic, minced
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
- OR...
- 2 bottles ceaser dressing
- SALAD:
- 1 package pasta of choice
- 3 medium cucumbers
- 2 packages cherry or grape tomatoes
- 1 large red onion
- 2 jars kalamata olives, pitted & halved
- 4 packages feta cheese, crumbled
How To Make grilled greek chicken pasta salad

Step 1Whisk all marinade ingredients in a small bowl. Place chicken in a reasealable plastic bag in a shallow bowl or dish. Pour marinade over chicken. Seal bag; turn to coat chicken. Marinade in frig for 24 hours; turning occasionally.

Step 2IF USING BOTTLED DRESSING; SKIP THIS STEP. In a screw-top jar, combine dressing ingredients. Cover & shake well. (MAKE THIS THE DAY BEFORE USING SO ALL THE FLAVORS MARRY TOGETHER).

Step 3After marinading time is done...cook pasta according to directions. Drain with cold water; drain again.

Step 4Drain chicken, discarding marinade. Place chicken on the rack of an uncovered grill directly over heat. Grill 12-15 minutes or until tender & no longer pink (170 degrees), turning once.

Step 5Cool chicken until cool enough to handle (15-30 minutes). Transfer chicken to a cutting board; cut into bite-size pieces.

Step 6In a very large bowl, toss together the cooked pasta, tomatoes, cucumbers, onion, olives & cut up chicken pieces.

Step 7Drizzle dressing over pasta/chicken mixture; toss to coat.

Step 8Cover & chill in frig for at least 2 hours or longer.

Step 9To serve, add feta cheese; toss. Enjoy!
