    white rice
  • 2 1/2 c
    baby spinach
  • 1 tsp
  • 1/4 tsp
  • 1/2 tsp
    ground cumin
  • 4
    boneless skinless chicken breasts
  • 2 Tbsp
    canola oil
  • 1 tsp
    curry powder

How to Make Grilled Curry Chicken with Spinach Rice


  1. Preheat grill.
  2. Cook rice according to package directions. Fluff with a fork. Stir in spinach, 1/2 tsp salt, pepper, and cumin. Cook until warm.
  3. Coat chicken on both sides with oil. Mix curry powder and 1/2 tsp salt in a small bowl and rub onto chicken.
  4. Grill chicken over medium with lid closed for 10 minutes, turning once, or until cooked through. Serve with rice.
