- 2 1/2 cups baby spinach
- 1 teaspoon salt
- 1/4 teaspoon pepper
- 1/2 teaspoon ground cumin
- 4 - boneless skinless chicken breasts
- 2 tablespoons canola oil
- 1 teaspoon curry powder
How To Make grilled curry chicken with spinach rice

Step 1Preheat grill.

Step 2Cook rice according to package directions. Fluff with a fork. Stir in spinach, 1/2 tsp salt, pepper, and cumin. Cook until warm.

Step 3Coat chicken on both sides with oil. Mix curry powder and 1/2 tsp salt in a small bowl and rub onto chicken.
