1 cwhite rice
2 1/2 cbaby spinach
1/2 tspground cumin
4boneless skinless chicken breasts
2 Tbspcanola oil
1 tspcurry powder
How to Make Grilled Curry Chicken with Spinach Rice
- Preheat grill.
- Cook rice according to package directions. Fluff with a fork. Stir in spinach, 1/2 tsp salt, pepper, and cumin. Cook until warm.
- Coat chicken on both sides with oil. Mix curry powder and 1/2 tsp salt in a small bowl and rub onto chicken.
- Grill chicken over medium with lid closed for 10 minutes, turning once, or until cooked through. Serve with rice.
