Ingredients
- 1 - whole chicken, spatchcocked then remove the ribs.
- - salt and pepper
- SAUCE
- 1 tablespoon vegetable oil
- 1 small onion, chopped
- 1 tablespoon ancho chili powder
- 1/3 cup ketchup
- 1/4 cup peach preserves
- 1/4 cup dill pickles, chopped
How To Make grilled chicken with peach pickle sauce

Step 1Get your grill ready. Place a small foil pan of water on one side of the grill and put the coals on the other side. Once hot, season the chicken all over with salt and pepper.

Step 2Place the chicken skin side down and cook over the coals until the skin is browned. Move the chicken to the side over the water and turn it over. Close the lid on the grill.

Step 3Meanwhile, make the sauce. Place the oil in a saucepan and add the shallots. Cook about 5 minutes.

Step 4Add the chili powder and ketchup. Cook 2 minutes. Stir in the peach preserves and cook about 8 minutes.

Step 5Stir in the pickles and place them into a food processor, and process until smooth.

Step 6Baste the chicken with the sauce. Turn the chicken until it is cooked through. Enjoy.
