grilled chicken tacos
These were so good and comes together quickly. We were surprised we could only do one taco a person, so we had extra mix for leftovers which was just as good the next day. Second day after grilling in butter we melted some cheese on top and put under the broiler for a couple minutes. Definitely will do these again!

Ingredients
- 4 chicken breasts
- 1 large chicken broth
- 1 large red bell pepper
- 11 large green bell pepper
- 1 red onion
- 1 can crushed tomatoes
- 1 cup water
- cajun seasoning
- adobo powder
- 1 white pepper
- smoked paprika
- flour tortillas
- butter for saute and frying
- shredded cheese (i use mozz and cheddar)
How To Make grilled chicken tacos

Step 1Boil chicken breasts in broth til cooked through and easy to shred

Step 2Remove from broth and shred chicken. Set aside

Step 3While chicken is cooking, slice up peppers and red onions in thin strips. I

Step 4Saute peppers and onions in skillet with oil and butter til tender.

Step 5Add can crushed tomatoes, shredded chicken, and water.

Step 6Add seasonings, (adobo, Cajun seasoning, paprika) to taste. Allow to cook for several minutes til we'll blended.

Step 7Melt butter in second skillet and dip tortilla in chicken and pepper mix. Place dipped side up in skillet. Add shredded cheese, chicken mixture to tortilla and fold in half. Fry both sides and serve with Pico, sour cream, as desired.
