Green Chili Casserole
I have cooked this many times over the years. My husband and I and our 5 children all love the creamy, cheesy goodness.

·1 rotisserie chicken 1 1/2 breast cut up in small pieces
·3 corn tortillas broken up in little pieces about 1 inch
1 can(s)15.25 ounce kidney beans
1 can(s)cream of chicken soup
2 can(s)small cans diced ortega green chilis
1 smallcan sliced black olives optional
1 smallonion diced and sauted
1/4 lbcheddar cheese, shredded use more cheese if you like more
1/4 lbjack cheese, shredded use more cheese if you like more
How to Make Green Chili Casserole
- Directions: Oil an 8" square baking dish
- oil an 8" square baking dish.
Spread the chicken pieces on the bottom of the baking dish. Spread the broken up tortillas over the chicken.
In a bowl mix the kidney beans, cream of chicken soup, green chilis, sliced black olives and sauted onion. Pour over the chicken and tortillas in the baking dish. Do not stir.
Sprinkle the cheddar cheese over the ingredients then spread the jack cheese over the cheddar cheese.
- Put in a pre heated 300* oven. Bake 35 minutes until cheeses are melted and lightly browned.
