green chicken enchiladas

we just love mexican food, I also worked at Taco bell back in the day, so i loved the green sauce and now i have come up with this one!

Ingredients

  • 1 pound chicken breast strips
  • 1 medium onion chopped
  • 2 cans old el-paso green enchilada sauce
  • 1 can cream of mushroom soup
  • 2 cups shredded cheddar cheese
  • 1 package flour tortillas
  • 1/4 cup butter

How To Make green chicken enchiladas

  • Step 1
    Boil chicken in water add a bouillon cube. once done, shred chicken up, set aside. in dutch oven melt butter cook onions in butter, add shredded chicken and enchilada sauces and cream of mushroom soup, blend well.
  • Step 2
    next, i cut up my tortillas into bite size pieces. using a 9X13 casserole pan start with some chicken soup mix (so it don't stick)then layer tortillas over that , more chicken then cheese repeat with tortillas, sauce and cheese till all gone bake in the oven till cheese is nicely melted and serve.
