green chicken enchilada's

I found the origional recipe on a can of Old ElPaso green enchilada sauce...then I made a couple slight changes so everyone in my family would eat it. Now it's EVERYONE'S favorite!!

Ingredients

  • 1-1 1/2 pounds chicken, boneless and skinless
  • 1-8oz. package cream cheese
  • 3 cans green enchilada sauce
  • 1 package flour tortillas
  • 1 package mexican blend shredded cheese(not w/seasonings!)

How To Make green chicken enchilada's

  • Step 1
    Cut up, brown & season to your chicken to your liking...I add garlic & some taco seasonings. Sometimes I even throw in some onion!
  • Step 2
    After your chicken is cooked add 1 can of green sauce,& your cream cheese. Once that is melted & everything is combined well, you are ready to load up your tortillas.
  • Step 3
    Grease your baking dish, put about 1/4 C. of meat mixture per tortilla & roll & place seam side down in your dish, & repeat 'til you run out.
  • Step 4
    Pour the other 2 cans of green sauce over the top of everything & bake at 350* 'til everything is hot & bubbeling. Scatter your mexican cheese blend over the top & melt. Once melted remove from oven & let sit a few minutes then serve & enjoy!
