Ingredients

  • 1 pound green beans
  • 1/2 pound chicken thighs, skinless and boneless,cut into 1/4 inch slices and against the grain.
  • 1 tablespoon oyster sauce
  • 1 tablespoon soy sauce
  • 1/2 tablespoon soy sauce, dark
  • 1 teaspoon cornstarch
  • 1/2 teaspoon sugar
  • 1/8 teaspoon baking soda
  • cooking oil
  • 6-8 cloves garlic, finely minced

How To Make green beans and chicken

  • Step 1
    Cut green beans in half. Wash and rinse. Pat dry thoroughly. Set it aside.
  • Step 2
    Marinate sliced chicken with oyster sauce, soy sauce, dark soy sauce, cornstarch, sugar and baking soda. Marinate for 15 mins.
  • Step 3
    In a large wok, heat enough oil to shallow fry. About 1/2 cup of oil depending on the size of your wok. Heat oil to 350F.
  • Step 4
    Add green beans to oil carefully. Fry for 30 seconds. If steaming, add green beans to boiling water for 1 min. For both methods, strain green beans right away and set it aside to cool (at room temp) while following the next steps.
  • Step 5
    Leave 1-2 tbsp of oil in wok. Sauté chicken until cooked through. Shift chicken to one side of the wok.
  • Step 6
    Add garlic and sauté for 30 seconds-1 mins (so it doesn’t burn).
  • Step 7
    Add green beans then toss together with garlic and chicken.
  • Step 8
    Serve with steamed rice.
