greek spinach and chicken orzo
This recipe was given to me by a neighbor. I love it and so does my family. A great hit at potlucks.

Ingredients
- 8 ounces orzo (rice shaped pasta)
- 1 - deli rotisserie chicken, skin removed, meat shredded
- 3 cups fresh baby spinach
- 1 cup (4oz.) crumbled feta cheese
- 1 - large tomato, diced
- 1/2 cup pitted kalamata olives
- 2 tablespoons olive oil
- 1/2 teaspoon salt
How To Make greek spinach and chicken orzo

Step 1Cook orzo in large pot of boiling salted water according to package directions.

Step 2Drain.

Step 3Return orzo to pot.

Step 4Stir in all remaining ingredients.

Step 5Cook 2 to 3 minutes over medium heat or until heated through.
