greek spinach and chicken orzo

This recipe was given to me by a neighbor. I love it and so does my family. A great hit at potlucks.

Ingredients

  • 8 ounces orzo (rice shaped pasta)
  • 1 - deli rotisserie chicken, skin removed, meat shredded
  • 3 cups fresh baby spinach
  • 1 cup (4oz.) crumbled feta cheese
  • 1 - large tomato, diced
  • 1/2 cup pitted kalamata olives
  • 2 tablespoons olive oil
  • 1/2 teaspoon salt

How To Make greek spinach and chicken orzo

  • Step 1
    Cook orzo in large pot of boiling salted water according to package directions.
  • Step 2
    Drain.
  • Step 3
    Return orzo to pot.
  • Step 4
    Stir in all remaining ingredients.
  • Step 5
    Cook 2 to 3 minutes over medium heat or until heated through.
