8 oz
penne pasta, cooked al dente
1 small
boneless, skinlesss chicken breast, cut-up and cooked
4 oz
guyere shredded cheese
4 oz
shredded sharp cheddar cheese
4 oz
crumbled feta cheese
1/2 c
grated parmesan cheese
10 oz
frozen chopped spinach, thawed & drained
1/2 stick
melted butter
1 c
skim milk
egg whites
1 tsp
minced garlic
salt & pepper to taste
2 Tbsp
italian dressing

How to Make "Greek" Mac & Cheese


  • 1Cut up on small boneless, skinless chicken breast and place in a small skillet with 2 Tbsp. Italian dressing and cook on medium heat until done. Set aside.
  • 2Cook 8 oz. Penne pasta until Al dente
  • 3Mix together egg whites, skim milk,guyere cheese, cheddar cheese, feta cheese, 1/4 cup of Parmesan cheese.
  • 4Mix together pasta, chicken, melted butter and cheese mixture in a cassarole dish and salt & pepper to taste. Top with remaining Parmesan cheese.
  • 5Bake in preheated oven at 350 degrees for 1 hour. I serve with a side of baked garlic bread. Enjoy!
