Ingredients For "greek" mac & cheese

  • 8 oz
    penne pasta, cooked al dente
  • 1 sm
    boneless, skinlesss chicken breast, cut-up and cooked
  • 4 oz
    guyere shredded cheese
  • 4 oz
    shredded sharp cheddar cheese
  • 4 oz
    crumbled feta cheese
  • 1/2 c
    grated parmesan cheese
  • 10 oz
    frozen chopped spinach, thawed & drained
  • 1/2 stick
    melted butter
  • 1 c
    skim milk
  • 3
    egg whites
  • 1 tsp
    minced garlic
  • salt & pepper to taste
  • 2 Tbsp
    italian dressing

How To Make "greek" mac & cheese

    Cut up on small boneless, skinless chicken breast and place in a small skillet with 2 Tbsp. Italian dressing and cook on medium heat until done. Set aside.

    Cook 8 oz. Penne pasta until Al dente
  • 3
    Mix together egg whites, skim milk,guyere cheese, cheddar cheese, feta cheese, 1/4 cup of Parmesan cheese.

    Mix together pasta, chicken, melted butter and cheese mixture in a cassarole dish and salt & pepper to taste. Top with remaining Parmesan cheese.

    Bake in preheated oven at 350 degrees for 1 hour. I serve with a side of baked garlic bread. Enjoy!
