After trying this soup at a local diner, I was hooked and begged for recipe! It is a great winter soup but also a great soup for spring since its so refreshing!

Ingredients
- 6 cups chicken broth
- 1/2 cup uncooked orzo pasta
- 4 large eggs
- 1/3 cup lemon juice
- 1 cup carrot, shredded
- 1/4 teaspoon salt and pepper
- 8 ounces cooked chicken ( shredded or bite size pieces)
How To Make greek lemon chicken soup

Step 1Bring broth to a boil in a large saucepan.

Step 2Add orzo & reduce heat and simmer 5 minutes or until orzo is slightly tender.

Step 3Remove from heat. Place eggs and juice in a blender or food processor, process until smooth.

Step 4Remove 1 cup broth from pan with a ladle, making sure to leave out orzo. With blender or processor on, slowly add broth, process until smooth.

Step 5Add carrot, salt, pepper and chicken to pan. Bring to a simmer over medium-low heat and cook 5 minutes or until orzo is done.

Step 6Reduce heat to low. Slowly stir in egg mixture; and cook 30 seconds, stirring constantly(do not boil).
