Ingredients

  • 3 pounds frozen chicken wing drummettes, thawed (48 oz)
  • MARINADE
  • 2/3 cup olive oil
  • 2 tablespoons fresh lemon juice
  • 2 tablespoons chopped fresh garlic
  • 2 teaspoons dried oregano
  • 2 teaspoons salt
  • 1/2 teaspoon fresh ground black pepper
  • 1/2 teaspoon crushed red pepper
  • CUCUMBER DIPPING SAUCE
  • 1 small cucumber
  • 1 cup plain yogurt
  • 1 cup sour cream
  • 1 tablespoon lemon juice
  • 1 tablespoon dried dill weed
  • 1/2 teaspoon salt
  • 1/4 teaspoon fresh ground black pepper

How To Make greek chicken wings with cucumber dipping sauce

  • Step 1
    Combine all marinade ingredients.
  • Step 2
    Then pour over chicken in a large resealable plastic bag. Coat the chicken with the mixture. Refrigerate, turning occasionally for a minimum of 3 hours or overnight.

    Start the cucumber sauce. It needs to be combined and refrigerated for at least 2 hours, but it is best if made a day ahead. Peel, seed, and shred the cucumber.

    Add all the sauce ingredients to a small bowl.
  • Step 5
    Mix well.
  • Step 6
    Cover and refrigerate alongside the chicken.
  • Step 7
    When ready to eat, heat the oven to 400 degrees F. Remove chicken from the marinade and discard the marinade. Arrange chicken on aluminum foil-lined 15x10x1 pan.

    Bake for 45 - 50 minutes, turning once midway through baking.
