Ingredients
- 3 pounds frozen chicken wing drummettes, thawed (48 oz)
- MARINADE
- 2/3 cup olive oil
- 2 tablespoons fresh lemon juice
- 2 tablespoons chopped fresh garlic
- 2 teaspoons dried oregano
- 2 teaspoons salt
- 1/2 teaspoon fresh ground black pepper
- 1/2 teaspoon crushed red pepper
- CUCUMBER DIPPING SAUCE
- 1 small cucumber
- 1 cup plain yogurt
- 1 cup sour cream
- 1 tablespoon lemon juice
- 1 tablespoon dried dill weed
- 1/2 teaspoon salt
- 1/4 teaspoon fresh ground black pepper

Step 1Combine all marinade ingredients.

Step 2Then pour over chicken in a large resealable plastic bag. Coat the chicken with the mixture. Refrigerate, turning occasionally for a minimum of 3 hours or overnight.

Step 3Start the cucumber sauce. It needs to be combined and refrigerated for at least 2 hours, but it is best if made a day ahead. Peel, seed, and shred the cucumber.

Step 4Add all the sauce ingredients to a small bowl.

Step 5Mix well.

Step 6Cover and refrigerate alongside the chicken.

Step 7When ready to eat, heat the oven to 400 degrees F. Remove chicken from the marinade and discard the marinade. Arrange chicken on aluminum foil-lined 15x10x1 pan.

Step 8Bake for 45 - 50 minutes, turning once midway through baking.
