grandmas' chicken adobo
I remember the aroma of this recipe when I was a little girl. It would draw me to the kitchen to see my grandma cook. I just couldn't wait to eat. I recently got my grandmas' recipe. I was so excited that I made this dish right away, and the aroma brought me back to my childhood. I hope you enjoy this flavorful dish.

Ingredients
- 3 packages chicken (drummets)
- 2 pounds chicken thighs about 6
- 1 tablespoon olive oil, extra virgin
- 1 cup apple cider vinegar
- 8 tablespoons soy sauce
- 2 teaspoons peppercorns, whole black
- 4 slices ginger (about 1/2: thick) crushed
- 6 large garlic cloves, crushed
- 1/2 teaspoon sea salt
- 1 stick cinnamon
- 3 small bay leaves, dried
- 1 teaspoon black pepper

Step 1Combine all ingredients in a bowl, add chicken, cover, and allow to marinate overnight. Stir fry chicken in 1 Tbl Olive oil until brown, add liquid, bring to boil until it thickens. Take out bay leaf. Serve with jasmine rice.
